Savory Spiced Soy Keema: The star of our wrap is textured vegetable protein (TVP), often referred to as soy keema or soy granules. This plant-based protein is rehydrated and then sautéed with a flavorful blend of onions, ginger-garlic paste, green chilies (adjusting for spice level), tomatoes, and aromatic Indian spices such as turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and perhaps a touch of pav bhaji masala for extra zest. This creates a savory and slightly spicy "keema" (minced) filling.
Warm Soft Roti/Tortilla: The flavorful soy filling and vibrant vegetables are snugly wrapped in a warm, soft whole wheat roti (a staple in Indian cuisine and a healthier option) or a soft tortilla, providing a perfect handheld meal.
Tangy Tomato-Onion Masala: The spiced soy keema is often cooked in a light and tangy tomato-onion masala. This base adds moisture, flavor, and a slight sweetness to the filling, enhancing the overall taste profile.
Creamy Sauce: To provide a creamy and cooling element, we include a creamy sauce. This could be a vegan mayonnaise (readily available), a cashew-based cream for a plant-based richness, or even a dairy-based yogurt sauce if a vegan option isn't specifically required. A sprinkle of chaat masala in the creamy sauce can add a tangy zing. A very light drizzle to mimic a non-vegan mayo is also an option.
